Christopher Bryant has a Ph.D. from the London School of Economics and Political Science (1970). He was a Professor (all three levels) of Geography, University of Waterloo, Ontario, from 1970 to 1990, Chair of the Department (1980-1983), and director of the Program for Local Development, a Canada-wide program in partnership with the Canadian Association of Economic Development, from 1984 to 1990. He was Full Professor of Geography at the Montreal University since 1990 and Adjunct Professor since September 2014. He is also an Adjunct Professor with the School of Environmental Design and Rural Development, University of Guelph, since September 2012. He is past Vice Chair (1996-2000) and Chair (2000-2006) of the Commission of the International Geographical Union on Sustainable Development and Rural Systems and was Editor-in-Chief of the Canadian Journal of Regional Science from 1997 to 2010.

Fatih Yildiz is Founding member of the Department of Food Engineering of the Middle East Technical University in Ankara, Turkey. He has obtained his education at Maryland University in College Park, USA. His previous work experience includes teaching positions at the University of Minnesota and Maryland University, USA. Prof. Yildiz’s current research activities are focused on functional foods, health claims, as well as DNA technologies in food and agriculture and minimally processed foods. Prof.Yildiz is the author and editor of one of the first book published on phytoestrogens entitled” Phytoestrogens in Functional Foods” published by CRC and published several other books. Prof. Yildiz is currently Founder and Director of Mogan International Research Center Ankara Turkey, organizing conferences, writing books and consultant for companies among others.

Dr. Joycelyn Peterson , registered dietetian, completed Nutrition and Dietetics degrees at Loma Linda University (M.P.H., and Dr.PH.), and Johns Hopkins University (post-master’s studies in international nutrition). She is professor and chair of Nutrition and Dietetics Department at Oakwood University, Alabama, USA. She recently published her dissertation in the Annuals of Nutrition Metabolism 8/2011, and is a contributing writer for newspapers and health magazines and has also published two vegetarian cookbooks. Her professional experience includes vegetarian nutrition consultant, and author, public health speaker, and program planner for international and state-wide public health nutrition initiatives, conducting nutrition research at the undergraduate and graduate levels.

Dr Derek Watson Senior Fellow of the Higher Education Academy, founder of the Faculty ‘Business Clinic’ and the Doctoral lead for the University’s ‘Research Fridays’ programme and has rich experience of mapping skills requirements in emerging sectors. Dr Watson has extensive links and networks as a result of sourcing and embedding external engagement opportunities across the curriculum, with an international portfolio of clients and contacts, such as the British Cabinet Office, Indian Government Council of Scientific and Industrial Research, Dubai Police and Canon International. His research focuses on academic-industry collaboration, investigating the impact of knowledge exchange and food safety cultural compliance. He actively documenting his consultancy experience via international academic journals and has delivered lectures and seminars at universities and symposiums on a global scale. He has been appointed on the editorial board for the ‘International Journal of Academic Research in Management’. Dr Watson is also a Doctoral External Examiner, academic reviewer of several international journals and currently employed as ‘External Examiner’ for Staffordshire University DBA programmes in Business & Law. In addition, a Visiting Professor at Sias Business School and Sias Academy for Open Innovation at Sias International University in China, the Technological University of Panama and Senior Research Fellow at the Cyprus Business School, Cyprus.

Professor Elliott graduated with First Class Honours in Plant Sciences from the University of Wales in 1963. His PhD in plant biochemistry (1966) in the laboratory of Professor H.E. Street at the University of Wales was followed by a period as a Fulbright Scholar and Research Staff Biologist at Yale University (1967-1969). He returned from the USA to take the post of Lecturer in Plant Biochemistry at the University of Leicester (1969-1971), then he became Professor and Head of the School of Life Sciences at De Montfort University, Leicester (1971-1994). He was Chairman of the College of Deans at De Montfort University (1989-1993) then Founding Director of the Norman Borlaug Institute for Global Food Security (1994 to date) and Editor in Chief of the BioMed Central open access journal Agriculture and Food Security (2011 to date). Professor Elliott is the author of several hundred research publications with emphasis on molecular biological approaches to cereal improvement and he has directed the Higher Degree programmes of more than fifty Graduate Students. He was honoured by the award of the Fellowship of the Royal Society of Arts (1984), the Fellowship of the Royal Society of Biology (1989), the Charles University Medal (1992), the Gregor Mendel Gold Medal for Biological Sciences Research of Exceptional Merit (1993), the Jan Evangelista Purkyne Medal (1994) and the DSc (Honoris Causa) of the Bulgarian Academy of Agricultural Science (2006).He was a Member of the Science and Engineering Research Council’s Biological Sciences Committee (1978-1981), a Member of Various Appraisal Committees of the Biotechnology and Biological Sciences Research Council, a Member of the Council for National Academic Awards' Life Science Research Degrees Committee (1988-92) and an Accredited Specialist for The Hong Kong Council for Academic Accreditation ( 1990 to 1999). He is currently a Member of the Swedish Research Council for Sustainable Research (2018 to date).

Yuxiang Sun received her MD from Beijing Medical University, P. R. China and PhD at the University of Manitoba, Canada. She subsequently received postdoctoral training at Baylor College of Medline. She is currently a principle investigator at Baylor College of Medicine. Her research interests are obesity, diabetes and metabolic regulation. He has published more than 40 peer reviewer papers many of which are in high ranking journals such as Cell Metabolism, JCI, PNAS, and Aging Cell. Currently, she serves as reviewer for a number of endocrine journals, and she is the Editorial Board Member of World Journal of Diabetes (WJD).

Annette C Bentley has obtained MS degree in medical education from the University of Medicine and Dentistry of New Jersey in 2003. She has also obtained a MS degree in food science from Louisiana State University in May of 2013. She founded and serves as the President of the American Celiac Society. She has been published in the Journal of General Psychology and the Who sprue (American Celiac Newsletter) the lifeline (CSAUSA newsletter) and the Eucharistic ministry. She has done many presentations at conference throughout the world.
